Growing up, we lived 4-5 hours from my grandparents (it depended on traffic as we were leaving Chicagoland). Consequently, we spent every major holiday with them – either at our house or at theirs. Spending the holiday at my grandparents’ house involved my two sisters and I sharing a room. This always resulted in either a) much giggling, or b) much fighting. Occasionally, however, it would involve both a and b. Like the night my youngest sister would not stop singing the Rice A Roni jingle.

Nailed it. I’m normally hesitant of homemade rice recipes because they’re typically very bland. But for some reason I decided to give it a whirl anyway, and I’m glad I did. I suggested maybe adding an herb next time, but the husband told me I should leave it alone.


As I’m sure you’ve figured out by now, I’ve got a lot of noodle action going on up there. That’s because I didn’t have as much rice (I used brown) as I thought I did. I ended up with just under 3/4 cup of rice and used noodles (thin spaghetti) to fill. It worked.

Last week I lifted nothing more than a fork and knife. And a wineglass. (Obviously.) But this week it’s back to reality – no more lobster rolls, no more Dunkin’ Donuts for breakfast, and no more personal chef. Or, you know, random restaurant chefs. One and the same really.

I was kind of dying for some vegetables by the time we got back. Not that I didn’t eat any while we were in Cape Cod/Boston, but let’s just say I was more intrigued by dishes with names like “lobster quesadilla” (if you’re ever faced with one, don’t think twice – just eat it and then hug the person who gave it to you). This dish met my requirements because a) it involves chicken which is the husband’s favorite food in the world and b) it had the word “vegetables” in the name. Sold.

Nailed it. The hubs went back for seconds and took leftovers for lunch the next day. That’s really all the endorsement you need, people.


I cut the chicken into bite size pieces before browning so it would cook faster and used regular Ragu instead of Prego Veggie Smart. As you can see, my sauce was a little runny. I think next time I’ll cut back on the water (or cut it out altogether).

Excuses Excuses

I’ve obviously been slacking the last week and a half. But I have an excellent excuse.


We moved into our house on Friday!!!

It’s been a very long, drawn out saga involving the bank reaching a level of incompetence that I didn’t even know existed. But our builder is a total rockstar and let us move in on Friday even though we still haven’t closed. Livid doesn’t even begin to describe my feelings toward the bank right now.

I have a new Pinterest recipe planned for Friday or Saturday night, so you may luck out with a real post before I leave on vacation Sunday (that’s right – a real vacation not involving either my or the husband’s family). But if the chaos continues, you’re SOL for the next week and a half. Sorry! (No, actually I’m not. Because did you see the part where I get to go on a real vacation???)
